The wine is then racked, inoculated and fermented at cool temperatures for 15-20 days. After fermentation and maturation the various tanks are brought together to make a final blend.

The vineyards are located at 400 metres above sea level. The soil is partly volcanic and consists of clay, sand, and limestone. The days are warm, yet the nights are cool, which is one of the keys to growing flavourful Sauvignon grapes with high acidity.
Bright and fresh aromatics with a slightly herbal note and a touch of minerality. The palate shows plenty of tropical fruit flavours underlined with zippy citrus notes. Nicely textured with a touch of sweetness on the finish.
