EDGE is a lush, complex Cabernet Sauvignon produced from grapes which were carefully selected from the great old vineyards in the Silverado Trail area of Napa Valley. Produced with 100% Napa Valley fruit, the product is a cutting edge wine without the cutting edge price. EDGE is the most reasonable Napa Valley Cabernet Sauvignon that one will find on the shelf, which does not compromise on quality. EDGE spent 16 months in French and American oak barrels, of which 30% were new. It is a blend of Cabernet and a small amount of Merlot to round out the edges.
This supple and lush wine immediately opens to flavours of blackberry, clove and hints of vanilla. The medium bodied palate is balanced with flavors of eucalyptus, sweet plums, ripe cherry and hints of tobacco, while the finish is accentuated by nice acidity and subtle oak flavors. The wine was fermented in traditional open fermenters with heading board systems and in static open fermenters using gentle cap management techniques. The pressed wine was aged in a combination of new French and American oak complemented with an even mix of 1, 2, 3 and 4 year old oak. The 2010 Cabernet Sauvignon was sourced from two vineyards in the McLaren Vale district.

All the grapes were harvested by hand in small cases of 14 kilos and carefully transported to the winery. Then all the grapes were gently macerated with a very delicate extraction, obtaining elegant structure, beautiful aromas and impressive color. Fermentation lasted about 2 weeks in stainless steel tanks, utilizing native yeast. After maceration just 34% of the wine was aged in 225 lt. French oak barrels; 45% second use and 55% third use.

Shot in the Dark is crafted from a blend of grapes from vineyards carefully selected by John Quarisa. The grapes were fermented to produce as much colour and flavour as possible. A portion of this wine was barrel fermented and then blended with the remaining wine to produce the right balance and structure.
