The red is full bodied, round with a powerful profile and is of an exceptional 2005 Bordeaux. A blend of 54% Merlot, 28% Cabernet and 18% Cab Franc. Aged 12 months in French oak with 20% new. The palate bursts with red, ripe berry fruit with a hint of spice and well integrated oak.

This wine was produced from fully ripe and concentrated Cabernet Sauvignon, Carmenere and Syrah. The structure, complexity, and elegance shown in this wine is a result of ageing in French oak barrels from different coopers.
Vintage Selection is elegant and complex on the nose. Ripe and fresh aromas of red and black fruit like raspberries, cassis and black cherries join together with subtle hints of oak, menthol and a slightly wet forest note. On the palate it is wide and opulent. Ripe and velvety tannins travel all through the palate, holding the weight of the intense and fresh fruity flavours and leaving a long and delicate aftertaste.
The different varieties of red grapes were hand harvested when fully ripe, and fermented separately in small open fermenters. The wines were pressed to a mix of French and American oak barriques. The wines spent 11 months in barrel before blending and bottling. On the palate, black currants, raspberries, licorice, vanilla. Rich and full-bodied with ripe berry fruits oak driven complexity.
Shot in the Dark is crafted from a blend of grapes from vineyards carefully selected by John Quarisa. The grapes were fermented to produce as much colour and flavour as possible. A portion of this wine was barrel fermented and then blended with the remaining wine to produce the right balance and structure.
This wine is a deep brick red, with notes of blackberry and blueberry with a hint of cinnamon spice. The palate is oozing dark black fruit with ripe tannins and well integrated oak.

The grapes are hand picked then cool-fermented and then gently pressed with 10% undergoing natural malo-lactic fermentation with oak. The wines are blended later to enhance complexity and structure.

INCA is a joint venture between Bodegas Lavaque and the famous flying winemaker Hugh Ryman. This Cabernet Sauvignon from the Maipo Valley is a blend of grapes from different types of soil, one alluvial and the other colluvial, which results in a wine that represents its origin, with aromas that recall red and black fruits, and a palate with excellent body and persistence.
In the glass, it shows a brilliant ruby red colour. The aromas of red fruit, tobacco, spice and dried fruit stand out on the nose, as well as the notes of vanilla and mocha added by the oak maturation. On the palate, the tannins are firm and elegant.
This wine has a lovely bright colour with aromas of citrus fruits. In the mouth it is vibrant with good acidity.

The grapes were picked between 13.5 to 14.0 Baume to produce the fruit flavours that are required to make this a great wine. The grapes were fermented to produce as much colour and flavour as possible. A portion of this wine was barrel fermented and blended with the remaining wine to produce the right balance and structure.
This wine is an intense red with purple hues. The bouquet is fresh, with complex cassis and mint fruit flavours with some well integrated vanillin oak. On the palate, full bodied with dense ripe fruit flavours balanced with oak, but long and smooth.
The wine was fermented in traditional open fermenters with heading board systems and in static open fermenters using gentle cap management techniques. The pressed wine was aged in a combination of new French and American oak complemented with an even mix of 1, 2, 3 and 4 year old oak. The 2008 Cabernet was sourced from four vineyards in the McLaren Vale district. The major percentage is from the McLaren Flat vineyards together with that of an immediate neighbour. These vineyards located at the northern part of the foothills ripen later than many of the other sub-regions resulting in “cooler climate” aromatic dark fruit driven wines with intense mid to back palate presence and an abundance of soft velvety tannins.
