The grapes were picked between 13.5 to 14.0 Baume to produce the fruit flavours that are required to make this a great wine. The grapes were fermented to produce as much colour and flavour as possible. A portion of this wine was barrel fermented and blended with the remaining wine to produce the right balance and structure.
This wine is an intense red with purple hues. The bouquet is youthful ripe berry flavours with well integrated vanilla oak. On the palate, full bodied dense ripe berry fruit flavours with vanillian oak finish long and smooth.

This wine is an intense red with purple hues. The bouquet is fresh, with complex cassis and mint fruit flavours with some well integrated vanillin oak. On the palate, full bodied with dense ripe fruit flavours balanced with oak, but long and smooth.
The different grapes were picked at the following sugar levels to produce the fruit flavours that are required to make this great wine blend. The Chardonnay at 13.5 Baume gives the melon and peach flavours with a medium bodied backbone and the Viognier at 13.0 Baume gives the wine honeysuckle and apricot flavours and also a different dimension and complexity. Most of the grapes were picked together and fermented in the same tank to help integrate all the flavours. Portions of this wine underwent oak until the right balance was achieved.
This wine is a straw yellow with a shade of green. The bouquet is fresh, with intense notes of peach, apple and lychee fruit. On the palate, medium weight wine with round ripe fruit flavours balanced with a hint of spice from the oak, finishing crisp and clean.
This wine is a deep plum to cherry red. The bouquet is intense youthful fresh ripe berry fruit flavours with spice and pepper fruits. On the palate, dense ripe mulberry fruit flavours balanced with spicy oak and ripe succulent tannins.
